Grilled Jamaican Jerk Chicken Recipe
Ingredients
2-4 lbs. chicken breast or chicken thighs
1/4 cup olive oil
1/4 cup soy sauce
1/2 cup orange juice
3/4 cup apple cider vinegar
1/2 cup of Thumbs Up Jamaican Jerk Seasoning
Juice of 1 lime or about 2 T. of lime juice
1 jalapeno, finely chopped
To make hotter use 1 habanero pepper instead of 1 jalapeno
3 green onions, chopped
Directions
To make the marinade, mix together jerk seasoning, oil, soy sauce, vinegar, orange juice, and lime in a bowl. Add pepper and onions.
Put meat into an airtight container and submerge chicken as much as possible, let marinate overnight. Grill until chicken reaches an internal temperature of 165°F.
For extra flavor, serve with Thumbs Up Jamaican Jerk BBQ sauce.
