Jamaican Curry Chicken

Jamaican Curry Chicken Recipe


Ingredients

  • 6 lbs. bone in or boneless chicken 

  • 3 stalks green onions

  • 1 tsp. dried ginger

  • 6 T. Thumbs Up Jamaican Jerk Curry Seasoning

  • 2 medium onions

  • 4 sprigs fresh thyme

  • 3 tomatoes

  • 2 tsp. salt (to taste)

  • 2 tsp. pepper (to taste)

  • 2 T. minced garlic

  • 2 10.5 oz. cans cream of mushroom soup


Directions

  1. Slice onions, chop tomatoes and green onions.

  2. Put onions, tomatoes, green onions, thyme, ginger, salt, pepper, garlic, and Thumbs Up Jamaican Jerk Curry seasoning in a large container.

  3. Cut up chicken and add to the container. Mix. Marinate for at least 24 hours. 

  4. Put in a pot with approximately ½ to ¾ cups of oil and cook on medium for approximately 50 minutes stirring frequently. Add a little water or chicken broth as needed, as well as two cans of cream of mushroom soup to thicken.

  5. Serve with rice or noodles.

    Optional: Add two medium potatoes during cooking process.
