3-2-1 Jerk Ribs Recipe
Ingredients
Pork Ribs
Mustard
Brown Sugar
Butter
Beer/Sprite & Apple Juice
Thumbs Up Jamaican Jerk Original BBQ Sauce (optional)
Directions
Pat ribs dry with a paper towel. Remove silver skin from the back side of the ribs.
Coat all sides with mustard and then a heavy amount of Thumbs Up Jamaican Jerk Seasoning.
Pre-heat grill to 225°F and place ribs on the grill bone side down. Cook for 3 hours.
Remove ribs from grill and place on foil sheet. Cover top side of ribs in brown sugar and slices of butter. Lift up the sides of the foil to pour in a little beer or sprite and apple juice mix (about 1/4 cup). Wrap foil snug around ribs, making sure not to puncture the foil. Do not tent the foil. Place ribs back on grill, bone side down, and cook for 2 hours.
Remove foil from ribs and place back on grill, bone side down. For dry ribs, continue cooking for 1 hour. For wet ribs, cook for 40 minutes, then baste ribs with Thumbs Up Jamaican Jerk Original BBQ Sauce, and cook for another 20 minutes.
